Modern shopfitting conjures up appetising atmosphere

The bakery of today has many faces. All of which will be on display from 11 to 13 September 2010 at SACHSENBACK

Modern shopfitting and the right technology lend bakeries and pastry shops a sales-promoting atmosphere. "A shop must be fitted to meet customer requirements and frequency", explains Hans Jürgen Päsler, Managing Director of Schrutka-Peukert. The company from Kulmbach designs and builds shopfittings for the bakery industry and the butchers' trade. Sales depend on the time of the day, the week or the season, he explains. Shops today thus need to be able to adapt their layout and presentation correspondingly.

The solution is shelf units which can be modularly built and freely configured. "A bread shelf can have one look in the morning and another in the afternoon", says Päsler. How this works exactly will be demonstrated at SACHSENBACK in Dresden. Also the growing trend seen in the bakery trade for out-of-home consumption means frequent design and technical changes are called for on the shop floor. Schrutka-Peukert have come up with a hot-counter snack concept as one solution to the problem. Kulmbacher are providing hot counter systems which work using a water bath, lower heat and/or upper heat. The perfect temperature can be achieved for any product, according to Päsler. The counter bases can be flexibly adjusted and the shelving system individually arranged.

Baked goods put into perspective
The counter sets the stage for the baked goods and the bread and pastries need to look appetising. This is where optimal lighting comes in. The company BÄRO will be presenting their new LED food light concept at SACHSENBACK, a particularly gentle, product-specific lighting for baked goods and pastries. The LED concept has a special light colour that coordinates perfectly with the food. This ensures that the real colour of the food is presented, so to speak, in its best light. LEDs emit almost no heat or UV radiation. This prevents, for example, any changes from occurring in the consistency of sensitive foods such as pastries or confectionery or from premature aging, assures the manufacturer. The formation of condensate in blister packaging is thus also avoided. The radiation-free light spectrum of the LED technology also ensures that bees, wasps and other insects, which normally gravitate towards the normal lighting systems, stay away from the sweet food.

Perfect pastry temperature
There are also advances being made in places where the customer has no access, such as in production. Flaked ice or nugget ice are deemed to be indispensable when it comes to controlling the temperature of pastry, buffet decoration or keeping food fresh. And this calls for the highest standard of hygiene. The company Funk have come up with an idea for their ice maker which allows for the super-hygienic water tank to be completely removed and cleaned in just a few simple steps. "We have taken on board the specific requirements and requests of the bakeries and come up with a solution that is as effective as it is simple", explains Dieter Funk, Managing Director of FUNK GmbH. The company will be showcasing its internationally patented idea Funk EasyClean at SACHSENBACK, an important product considering that regular cleaning ensures a good standard of hygiene and thus a high-quality product. The company Neie will be presenting an ice maker with the natural cooling agent R 290, propane. "The advantage to using a natural cooling agent, besides the energy saving, is that it contains a completely harmless hydrocarbon which does not have the potential to deplete oxygen and makes no direct contribution to the greenhouse gas effect", says Jürgen Neie. The company will be presenting its nugget ice maker in Dresden which, following a slight change to the machine, can also produce a finer ice known as flaked ice.

A shady spot to enjoy the sun
Customers are more than happy to sit outside on warm, sunny days. Especially when the bakery or pastry shop has a terrace. There is hardly a business that has not taken the chance to benefit from this lucrative outdoor service. However, guests are only likely to sit on a terrace if it provides sufficient shade from the sun. The investment is well worth it. Parasols are now available in endless designs and functions. They serve to attract attention and can be used for advertising the business. A great example here are the tulip parasols from MDT. New is the 24-hour lighting effect whereby various messages are projected onto the parasol while background music is played. Modern outdoor sunshade systems must not only protect customers from the wind and rain but they should also be lightweight and easy to operate, provide heat, lighting, as well as open and close electronically. In the future, it will be possible to integrate side wind protection walls into outdoor areas with MDT parasols. The parasol manufacturer has also optimised and further developed his print technology. Under the heading "Print dimensions", designs and varieties range from funky to tasteful, all of which will be on display at SACHSENBACK.
